Mixed Vegetables Shahi Curry Recipe


Ingredients :

Potato – 2

Carrot – 4

Turnip (Noolkol) – 2

Chow Chow (bengaluru kathirika) – 1

Green Peas – 1 cup

Onions – 1 cup

Beans – 1 cup

Ginger Garlic paste

Saffron (Kum Kum Poo)

Kashmiri Chili

Cloves (Lavangam)

Biriyani Leaves

Cardamom (Elaichi)

Cinnamon (Pattai)

Cashew nuts

Badam

Kasa Kasa

Curd – 1 cup

Oil and Ghee

 

Method :

1. Pour little oil and ghee in a vessel and heat it, add all the masala items such as biriyani leaves, cardamom, cinnamon, cloves, ginger garlic paste and fry till the fresh masala smell goes off for few minutes

2. Add onions and fry along with the masala items

3. After the onions become light brown in color add chili powder, salt, curd, and fry well

4. Grind cashew nuts, badam, kasa kasa by adding little bit of milk

5. Add this paste to the fried masala add the vegetables along with this and fry well, add water and close the lid for the curry to cook

6. After the curry is ready add the saffron to it and mix well

Alternative Recipe :

For making shahi paneer curry add paneer, peas, carrot, and follow the same method

 

Saffron in tamil is called Kum Kum Poo

Cloves in tamil is called Lavangam

Cardamom (Elaichi) in tamil is called yellakai

Cinnamon in tamil is called Pattai

Turnip in tamil is called Noolkol
