South Indian Special Arachu Vitta Sambar Recipe


Ingredients :

Brinjal/ Kathirikai – 3

Small onions/ Sambar vengayam/ Chinna vengayam – 5

Red gram/ Thuvaram paruppu – 1/2 cup

Bengal gram/ Kadalai paruppu – 1/2 spoon

Tamarind water/ Puli karaisal

Grated coconut/ Thuruviya thengai – 2 to 3  spoons or Coconut pieces – small (few)

Fenugreek/ Vendhayam/ Venthayam

Coriander seeds/ Dhania

Red chili’s/ Kaintha milagai – 6

Turmeric powder/ Manjal thool

Cumin seeds/ Seerakam/ Jeeragham

Mustard/ Kaduku

Curry leaves/ Karuveppilai

Oil/ Yennai

 

Method :

1. Pressure cook the red gram by adding  one and half cups of water, half teaspoon of oil, and pinch of turmeric powder

2. Then fry in oil and grind, by adding red chili’s, coriander seeds, bengal gram, grated coconut and fenugreek

3. Take a pan add oil, heat it, after oil gets heated fry by adding  brinjal, and small onions

4. Now add tamarind water, fried vegetables, grinded masala, salt to the pressure cooked red gram, mix well, and close the lid for the sambar to cook

5. Take a pan add oil, mustard, cumin seeds and curry leaves let it splutter, add this to the sambar and mix well, the recipe is ready
