Urad dhal/ Ulundu/ Minapappu
Red chili’s/ Kaintha milagai – 5
Cumin seeds/ Seerakam/ Jeeragham
Cinnamon/ Pattai
Clove/ Krambu

Tamarind juice/ Puli karaisal
Ginger Garlic Paste/ Inji poondu vizhuthu

Method :
1. Finely grind all the masala items like coriander, red chili’s, cinnamon, cloves and urad dhal by roasting them in oil
2. Take a pan add oil, cumin seeds and mustard, let it splutter. Now add onions, ginger garlic paste, turmeric powder, mix and fry well
3. After frying onions add capsicum, spring onions, tomato’s and brinjal, fry well
4. Now add the grinded masala, tamarind juice, pinch of sugar, salt, sufficient amount of water, and close the lid for the brinjal masala to cook
5. After the brinjal masala is ready mix it with separately cooked plain rice, add little ghee if desired, and garnish with coriander leaves, the recipe is ready
