Ingredients :
Eggplant/ Brinjal/ Kathirikai – 6/7 pieces (round shape)
All purpose Flour/ Maida Flour
Bread Crumbs
Garlic Pepper Seasoning
Ginger Garlic Paste/ Inji Poondu Vizhuthu
Oregano
Rosemary
Chili Flakes
Red Chili Powder/ Milagai thool
Coriander Powder/ Dhania thool
Turmeric Powder/ Manjal thool
Mint Dried Leaves/ Pudina ilai
Coriander Leaves/ Kothamalli ilai
Aniseed/ Sombu
Soya Sauce
Lemon Juice/ Elumichai Pazha Charu
Salt
Oil/ Yennai
Method :
1. Cut the Eggplant/ Brinjals into round pieces (disc shape)
2. Take a bowl and add all the ingredients like All purpose Flour, Garlic Pepper Seasoning, Ginger Garlic Paste, Oregano, Rosemary, Chili Flakes, Red Chili Powder, Coriander Powder, Turmeric Powder, Mint Dried Leaves, Aniseed, Soya Sauce, Lemon Juice, Salt and sufficient amount of water to make a fine paste
3. Then dip each of the Eggplant/ Brinjal pieces in the masala paste made previously and immediately coat both sides of the eggplant with bread crumbs
4. Meanwhile take a vessel add oil and heat it, when the oil gets heated add the eggplant pieces and fry them well until they turn into golden brown in color, Garnish with coriander leaves, the recipe is ready
