Ingredients :
Eggs/ Muttai – 5
Carrots – 2
Beans – 10
Red Radish/ Mullangi – 5
Green Onions/ Vengaya thal – 5
Onions/ Vengayam – 1 big
(Cut all vegetables to small cube size pieces)
Ginger Garlic Paste/ Inji Poondu Vizhuthu
Red chili flakes/ Kaaindha milagai – 2 Tbs
Red chili powder/ Milagai thool
Coriander powder/ Dhania thool
Oregano – 3 Ts
Garlic Pepper Seasoning – 4 Ts
Rosemary – 2 Ts
Salt
Oil/ Yennai
Butter
Method :
1. Beat all the eggs and keep it aside
2. Take a pan, add oil and heat it. Add onions, green onions and ginger garlic paste, Mix and fry well
3. Then add other vegetables like carrots, beans, red radish, green onions, onions, mix and fry well. Now add oregano, garlic pepper seasoning, rosemary, red chili powder, coriander powder and salt. Mix and fry well
4. Take a oven tray and grease it with butter. Preheat oven to 400 degrees
5. Add the previously stir fried vegetables (as bottom layer) and pour the egg mix on top of it (the egg mixture must cover the entire bottom vegetable layer)
6. Keep the tray in oven and let it cook (for 20 to 25 minutes/ until well cooked. Take a knife/ fork and slightly pierce the surface to check), and the recipe is ready
