1. Onion/ Vengayam – 1 cup (thinly sliced)
2. Egg / Muttai – 2/ desired number
3. Maida Flour/ All Purpose Flour/ Maida maavu – 1 1/2 cups
4. Butter/ Vennai – 1/2 stick for melting and 3/4 stick for stuffing inside the dough (see method 3 & 4 below)
5. Water – sufficient amount to make the dough
6. Lemon juice/ Elumichai pazha saaru – 2-3 drops
7. Amchoor powder
8. Garam masala
9. Turmeric powder/ Manjal thool
10. Dried Pudina / Mint leaves/ Pudina ilai
11. Cumin seeds/ Seerakam
12. Salt
13. Oil/ Yennai
1. Add melted butter, water, salt and lime juice, mix well and make the dough
2. Flatten the dough using the dough roller
3. Place the butter in the middle
4. Cover the butter with dough, ensure that the butter doesn’t come out tearing the dough while folding
5. Flatten the dough again with the roller and fold the flattened dough into three, vertically as shown
6. Refrigerate the folded dough for 15 minutes, now again repeat the process of flattening and folding the dough into three equal parts, again refrigerate it (this process has to be repeated for 7-8 times for the puff layers to form)
7. After the above process is complete flatten the dough and cut them into square shaped equally sized pieces
8. Meanwhile prepare the masala (*see masala preparation steps below)
9. Boil the eggs, remove the shell and keep it aside (cut them into two halves)
10. Place the masala on top of each eggs as shown above
11. Now place it on the dough pieces cut previously (place the egg diagonally to the square shaped dough piece)
12. Wrap only two edges of the dough on the egg piece placed (this shape/ design is similar to Frank in a blanket)
13. Make different shapes as you wish, also can make stuffing’s only using the masala (shown pinwheel and plait designs)
14. Cover the baking tray with baking sheet and grease it. Preheat oven to 450 degrees, then arrange the puffs on the tray , bake them until the puffs turn golden brown in color and layers start to pop up. Remove from oven and serve hot with ketchup, the recipe is ready

2. Add cumin seeds and fry well, Now add thinly sliced onions, amchoor powder, garam masala, dried pudina(mint) leaves, turmeric powder, salt, mix and fry well (cook until all moisture is absorbed), Remove from stove and the masala is ready to make the puffs stuffings
