Tasty Baingan Bharta Recipe | Eggplant Curry Recipe

Ingredients :

1. Eggplant / Kathirikai – 1

2. Onion / Vengayam – 1 cup

3. Tomato / Thakkali – 1 cup

4. Green Chili / Pachai Milagai – 3

5. Ginger Garlic Paste / Inji Poondu Vizhuthu

6. Kasoori Methi

7. Paprika – 1 Tbs

8. Garam Masala Powder – 1 Tbs

9. Cumin Powder – 2 Ts

10. Coriander Powder / Dhania Thool – 1 Tbs

11. Turmeric Powder / Manjal Thool – 2 Ts

12. Cumin Seeds / Seerakam

Method :

1. Take the eggplant and apply some oil on it, on all the sides. Preheat oven to 400 F and grill the eggplant until its skin shrinks in. Then remove from oven and remove/ peel off its skin after it cools

2. Now take a pan add oil and heat it, add cumin seeds and let it splutter. Then add turmeric powder, coriander powder, onions, saute them well for 3-4 minutes

3. Then add ginger garlic paste, salt, mix and saute all the ingredients for 2 minutes, and add tomato’s, saute them well

4. Add paprika, cumin powder, garam masala powder, green chili’s, saute them well, Then add little water if the masala becomes little thick, and let the curry cook

5. Now add the eggplant pieces, also add kasoori methi, smash and saute all the ingredients together for two more minutes, garnish with coriander leaves, the recipe is ready
