Radicchio is a leafy vegetable, it has red / purple leaves with white veins which mellows when roasted or grilled, it is a leaf chicory. They are also known as Italian Chicory. It has a bitter and spicy flavor (so soak them in cold water for at least 30 minutes before cooking it). The radicchio’s are perennial plants, they have various names like red – chicory, red leafed chicory, red italian chicory, chioggia where the names were kept based on the region were they were originated in Italy
