Stuffed Green Brinjals Curry Recipe (Indian Style) – Pachai Kathirikai Kulambu


Ingredients :

1. Green Brinjals/ Kathirikai  – cut them by retaining their stalk

2. Onion / Vengayam – 1 cup

Dry Roast and Grind To Paste

1. Grated Coconut/ Thuruviya Thengai  – 1/4 cup

2. Turmeric Powder/ Manjal Thool  – 1 Ts

3. Asafetida – 1 Ts

4. Black Gram/ Urad Dal/ Ulundu  – 1 Tbs

5. Aniseeds/ Sombu

6. Cinnamon Sticks/  Pattai – 2

7. Coriander Seeds/ Dhania – 2 Ts

8. Curry Leaves/ Karuveppilai

9. Peanuts/ Nila Kadalai – 1/4 cup

10. Dried Red Chili / Kaaintha Milagai – 5

11.  Split Bengal Gram / Chana Dal / Kadalai Paruppu – 1 Tbs

Grind To Paste 

1. Tomato/ Thakkali – 1 big chopped

2. Ginger and Garlic / Inji and Poondu

3. Green Chili / Pachai Milagai – 3

Method :

1. Fill the the (dry roasted and grinded) masala paste in between each of the brinjals. Add oil to a pan and heat it, fry the brinjals

2. Take a pan, add oil and heat it, add cumin’s, mustard and let it splutter. Now add the onions and saute them well, then add the grinded tomato paste, mix it well

3. Then add salt, little red chili powder(if required), Add the fried brinjals to the boiling curry and cook for 4-5 minutes, the recipe is ready
