Easy and Spicy Masala Egg Curry Recipe


Ingredients :

1. Egg / Muttai – 6 boiled

2. Onion / Vengayam – 1 cup

3. Tomato / Thakkali – 1 cup

4. Cumin Seeds / Seerakam

5. Mustard Seeds / Kaduku

6. Egg Curry Powder./ Egg Masala Powder – 1 Ts

7. Turmeric Powder / Manjal Thool – 1 Ts

8. Coriander Cumin Powder / Seerakam Dhania Podi – 2 Ts

9. Fennel Powder / Sombu Powder – 1 Ts

10. Red Chili Powder / Milagai Thool – 2-3 Ts

11. Tamarind Water / Puli Thani – 1/4 of a cup

12. Garam Masala Powder – 1 Ts

13. Oil / Yennai

14. Salt

Method :

1. Take a pan add oil and heat it, then add garam masala powder, also add the boiled eggs and fry them until they get a little crispy on outer layer, then set them aside

2. In the same pan add cumin seeds and mustard seeds, let them splutter, then add onions and saute them well, also add tomato’s , saute them well, for 1-2 minutes

3. Now add all the powder masala ingredients like egg masala/ curry powder, coriander cumin powder, turmeric powder, fennel powder, red chili powder, saute them well. Add tamarind water, salt, mix well, let it cook for few minutes, then add the eggs, mix well, garnish with coriander leaves, the recipe is ready
