Dindigul Thalappakatti Chicken Biriyani Recipe


Ingredients :

To Marinate

1. Chicken / Kozhi (Boneless or Bone ones) – cut them to small pieces

2. Thick Yogurt / Thayir – 1/2 cup

3. Turmeric Powder / Manjal Thool – 1 Ts

4. Red Chili Powder / Milagai Thool – 2-3 Ts

5. Salt

Other Ingredients

1. Basmati Rice / Biryani Rice – 3 cups (wash and soak the rice for atleast an hour)

2. Onion / Vengayam – 1 big finely chopped

3. Tomato / Thakkali – 1 chopped

4. Green Chili / Pachai Milagai – 3 chopped

5. Coriander Leaves / Kothamalli Ilai – few

6. Mint Leaves / Pudina Ilai – few

7. Shredded Coconut / Thuruviya Thengai – 1/4 cup

8. Small Onion / Chinna Vengayam – 5 chopped

9. Thick Yogurt / Thayir – 1/4 cup

10. Ginger Garlic Paste / Inji Poondu Vizhuthu

11. Ghee and Oil / Yennai

Masala Items For Biryani 

1. Red Chili Powder / Milagai Thool – 1 to 2 Ts

2. Turmeric Powder – 1 Ts

3. Biryani Masala Powder – 2 Ts

4. Bay Leaves / Birinji Ilai – 2

5. Cinnamon / Pattai – 2

6. Cardamom / Elaichi / Yellakai  Р2 or 3

7. Dagad Phool / Kalpasi – 1 or 2

8. Cloves / Krambu – 2

9. Kokum Phool White – 2

10. Fennel Seeds / Sombu – few

11. Star Anise – 2

Method :

1. Marinate the chicken along with the ingredients given under to marinate for atleast an hour

2. Then take a pan add oil and heat it, add the marinated chicken and saute it well, close the lid and cook for 10-15 minutes, then set it aside

3. Then grind to fine paste by adding ingredients like small onions, coconut, mint leaves, coriander leaves, green chili – 1, set it aside

4. Take a pressure cooker, add ghee and oil, heat it, then add all the whole masala ingredients like cinnamon, cardamom, cloves, bay leaves, kal pasi, kokum phool white, star anise, fennel seeds, let them splutter

5. Then add ginger garlic paste and saute it well, also add onions, green chili -2, mix well, add salt

6. Add other ingredients like grinded paste, turmeric powder, red chili powder, biryani masala powder, tomato, yogurt, mix well and let it cook

7. Then add the previously cooked chicken and soaked rice (drain the water), saute it for 1 to 2 minutes, then add sufficient amount of water, close the pressure cooker and let it cook on medium to high flame for one whistle, then reduce the flame between low and medium and cook for 10 to 15 minutes,switch off the flame, then once the pressure is gone open the lid and mix it slowly, the recipe is ready
