Festival Special Adhirasam Recipe


Ingredients :

  1. Rice/ Arisi – 2 cups
  2. Jaggery / Vellam – 1 and 1/2 cups
  3. Water – 3/4 cup
  4. Oil / Yennai

Method :

  1. Soak rice for at least 8 hrs, then take a cotton cloth and spread it on a big plate, then drain the water from soaked rice and spread the rice on the cloth, let it dry nicely
  2. Then grind the rice to a fine powder, and set it aside
  3. Now for making the jaggery syrup, take a thick bottom vessel, add water and heat it, then add the jaggery little by little and keep on stirring it, jaggery should dissolve nicely in water, after sometime of stirring check for the syrup consistency (if u lift the ladle the syrup should go down like a strand / u can take a small bowl with water at room temperature, add a small amount of the jaggery syrup to it and try to roll it, the syrup should not dissolve, it should form a nice smooth ball easily in the water), then your syrup is ready, switch off the flame, start adding the rice flour little by little to the jaggery syrup, mix it well and make the dough
  4. Transfer the dough to another bowl, close it with wet cloth for at least few hours
  5. Add oil to a vessel and heat it for deep frying the adhirasam’s, make small balls out of the dough and flatten it(u can either use banana leaf or a ziploc bag for flattening them apply some oil or ghee to the leaf or ziploc cover, so that it comes smoothly), drop the adhirasam’s in the oil, fry them until they are golden brown in color, they puff a little like puri’s, so take two plates and press each adhirasam’s by placing them in between two back of the plates, this will also remove the excess oil, and the recipe is ready

* if u want you can add a little cardamom powder too to the dough
