Soan Papdi (Patisa) Recipe


Ingredients :
1. All Purpose Flour / Maida – 1 cup
2. Chickpea Flour / Besan / Kadalai Maavu – 1cup
3. Ghee – 1 and 1/2 cup
4. Cardamom Powder / Elaichi Powder / Yellakai Powder

Other Ingredients :
1. Nuts like almonds or cashews or dried
grapes

For Making Sugar Syrup :
1. Sugar / Sarkarai – 2 cups
2. Water – 1/2 cup
3. Honey or Corn Syrup – 1 small Ts for making soft ball consistency

 

 

Method :

  1. Take a pan, add ghee and melt it, then add both the flours, mix it well until you get a liquidy consistency
  2. Then add cardamom powder, mix it well and switch off the flame and set aside, meanwhile grease a mixing vessel and set it aside
  3. Now for making sugar syrup, take a vessel add sugar and water mix it well, keep on stirring it, until the string consistency is reached, also add corn syrup or honey mix well, also try to remove the sugar crystals forming on the sides of the vessel, Check for soft ball consistency by putting a small drop of the syrup in a cup with room temperature water and try making the soft ball, if the consistency is reached switch off the flame and transfer it to the greased vessel
  4. Quickly add the previously prepared flour mixture and nuts, mix it, the mixing will be tough but mix it nicely, transfer it to another greased tray, and make the square shaped cut for making pieces once it cools off, garnish with more nuts on top if you desire, the recipe is ready
