Chettinad Special Mushroom Masala | Mushroom Chettinad is a dish made with the authentic chettinad spices and mushrooms, this recipe can be served as a side dish for any rice items or roti or naan too


 

Ingredients Required To Make Chettinad Mushroom Masala | Mushroom Chettinad :

1. Mushroom / Kaazhan – 2 cups chopped
2. Onion / Vengayam – 1 cup chopped
3. Tomato / Thakkali – 1 chopped
4. Green Chili / Pachai Milagai – 2 chopped
5. Salt and Oil

Ingredients Required For Making Masala Paste For Chettinad Mushroom Masala | Mushroom

Chettinad:

Saute by adding little bit of oil :

1. Cinnamon Sticks / Pattai – 2
2. Cardamom / Yellakai – 5 or 6
3. Star Anise – 1
4. Cloves / Krambu – 4
5. Cumin Seeds / Seerakam
6. Fennel Seeds / Sombu
7. Coriander Seeds / Dhania
8. Dagad Phool / Kalpasi
9. Pepper Cons / Milagu
10. Curry Leaves / Karuveppilai – few
11. Dried Red Chili / Kaaintha Milagai – 3 to 4
12. Coconut/ Thengai -small cube & Curry Leaves/Karuveppilai- few

Also add the ingredients below mentioned while grinding the masala paste :

1. Turmeric Powder / Manjal Thool – 1/2 Ts
2. Cashew Nuts / Mundhiri Paruppu – 10 soaked in water for 5 minutes
3. Ginger and Garlic / Inji and Poondu

Method For Making Chettinad Special Mushroom Masala |

Mushroom Chettinad :

  1. Take a pan add oil and heat it, add all the ingredients mentioned under to saute and grind to fine paste, saute them well, then let the ingredients cool for sometime before grinding, then add it to the mixer grinder, also add ginger, garlic, cashew nuts and turmeric powder, grind them all to a fine paste and set it aside
  2. Now in the same pan, add oil and heat it, then add onions, saute it, add salt
  3. Saute the onions until they turn slightly golden brown in color, if you want the dish to be little more spicier add a pinch of chili powder, mix well
  4. Add tomato and green chili’s, mix and saute them well too, Now add the grinded paste, mix and let it cook until you see the moisture starts absorbing a little bit and oil starts to separate, then add the mushrooms, mix well if required add sufficient amount of water, mix well, cover it with a lid and cook for 5 to 6 minutes or until the mushrooms are all well done/ cooked well, garnish with coriander and curry leaves, mix well for a minute, switch off the flame, and the Chettinad Special Mushroom Masala Recipe | Mushroom Chettinad is now ready to serve hot as a side dish with rice/ naan / roti etc.,
