Ingredients Required For Making Chili Chicken Dum


Ingredients Required For The Rice For Making Chili Chicken Dum Biryani :

1. Basmati Rice / Basmati Arisi – 3 cups soaked for 1 Hr in water along with whole masala ingredients
2. Cheese Cloth or any cotton cloth to make a small pouch for putting the whole masala ingredients in it and to soak
it in water along with the rice
3. Whole Masala Ingredients – Cumin Seeds/ Seerakam, Fennel Seeds/ Sombu, Pepper Cons/ Milagu, Cinnamon Stick/ Pattai, Cloves/ Krambu, Cardamom/ Yellakai, Bay Leaves/ Brinji Ilai, Star Anise, and Saffron/ Kum Kum Poo
4. Cilantro/ Kothamalli Ilai, Mint/ Pudina and Oil – 1/2 Ts

Ingredients Required To Make Red Chili Paste :

1. Red Chili / Kaaintha Milagai – 6
2. Ginger / Inji – small cube size chopped
3. Garlic / Poondu – 5 or 6
4. Onion / Vengayam – 1/2 cup chopped
5. Coconut / Thuruviya Thengai – 1/4 cup

Other Ingredients Required Are :

1. Chicken / Kozhi – boneless chicken cut to small pieces
2. Onion / Vengayam – 1 big or 2 cups chopped to make fried onions
3. Cilantro / Kothamalli Ilai
4. Mint Leaves / Pudina
5. Green Chili / Pachai Milagai – 1 chopped
6. Turmeric Powder / Manjal Thool – 1/2 Ts
7. Coriander Powder / Dhania Thool – 1/2 Ts
8. Kashmiri Red Chili Powder / Milagai Thool – 1 Ts
9. Biryani Masala Powder – 1 Ts
10. Lemon Juice / Elumichai Pazha Chaaru
11. Kewra Essence / Kewra Water – 2 Ts
12. Rose Essence/ Water – 2 Ts
13. Red Food Coloring
14. Yogurt / Thick Curd / Thayir – 3 Tbs
15. Salt, Ghee and Oil

Method For Making Rice For The Chili Chicken Dum Biryani :

  1. Soak the rice along with the whole masala ingredients mentioned above by putting them in a cheese/ cotton cloth and tie them like a small pouch and put them in the soaked rice so only the flavors and essence of the masala ingredients get in
  2. Add cilantro, mint and oil, cook the rice by adding (3 cups rice = 6 cups water), then fluff the rice with fork without breaking the long grains of the rice and set it aside

Method For Making Red Chili Paste For Chili Chicken Dum Biryani :

  1. Add all the ingredients mentioned under to make red chili paste in a blender and grind it to a fine paste and set it aside

Method For Making The Chili Chicken Dum Biryani :

  1. Take a mixing bowl add turmeric powder, coriander powder, red chili powder, biryani masala powder, green chili, cilantro leaves, grinded red chili paste, red food coloring, cut chicken pieces, mix well also squeeze in some lemon juice and marinate the chicken for at least 30 minutes
  2. Meanwhile fry the onions in oil and add half of the fried onions to the marinated chicken
  3. Take a deep vessel to make the dum for the biryani, add ghee, oil and heat it, then add the marinated chicken and saute them, add salt
  4. Once the chicken gets fried and cooked well add the yogurt and mix well
  5. Then add the cooked rice on top of it as the top layer for the dum, also add the other half of the fried onions, cilantro, mint, kewra essence, rose water essence, and ghee, close it with a cloth covered lid and let the biryani cook on a very low flame for at least 30 to 45 minutes, check in between so that the lower chicken layer does not get burnt
  6. After slowly cooking the biryani open the lid, mix the biryani rice and the chili chicken well without breaking the grains, and you can serve hot with rhaita or any biryani side dishes, the Chili Chicken Dum Biryani is all ready
