Srivilliputhur Palkova is milk sweet like made with whole milk along and sugar, it has a nice smooth flavors of milk and a grainy texture, it’s an authentic south indian special sweet, the ingredients are very simple but the process requires lots of stirring without moving away from the pan until the desired consistency is attained, even using a thick bottomed vessel is the key thing in making this sweet as it takes more time for cooking on the stove and the milk should not burn and stick to the base, to avoid it always use a nice heavy bottomed vessel, only whole milk gives the required consistency for this sweet than any other low fat 1% or 2% or not fat milk

Ingredients :

Ingredients Required For Making Srivilliputhur Palkova are :

1. Milk / Paal – whole milk – 1 and 1/2 litre
2. Sugar / Sakkarai – 1 cup or according to your requirements you can add more or less
3. Ghee / Nei – 1 small Ts

Method :

Method For Making Srivilliputhur Palkova :

  1. Take a heavy bottomed pan/ vessel and heat it, always keep the flame on low, add the milk, keep on stirring it
  2. Now stir the milk on low flame until the quantity starts to reduce, with grainy texture, color starts to change to slight yellowish color / cream, do not move away from the pan side, keep on stirring it,
  3. When the milk is reduced well as well as the color changes, add the sugar and mix well, also add a small Ts of ghee, mix well / keep on stirring it
  4. Keep stirring it until you see the palkova does not stick to the base of the pan, and comes out smoothly, now switch off the flame, transfer it to the serving bowl, garnish with almonds or cashew nuts (optional), the yummy Srivilliputhur Palkova is ready
