Ingredients :

Ingredients Required For Making Thai Curry Fried Rice :

1. Rice – cook rice and set it aside
2. Pepperoni – cut to small pieces
3. Shallots / Chinna Vengayam – 3 chopped
4. Onion / Vengayam – 1 cup chopped
5. Bell peppers / Kudai Milagai – 1 cup chopped
6. Mixed Vegetables – celery, carrots, french beans, baby corn/ corn, green peas, etc
7. Egg / Muttai – 4
8. Water Chestnuts – 1 cup sliced
9. Curry Powder – 2 Tbs & 10. Salt

Sauce Mixture Required For Making Thai Curry Fried Rice :

Soya Sauce, Chili Garlic Sauce, Vinegar, Tomato Sauce
(Mix Them Together And Set It Aside)

Method :

Method For Making Thai Curry Fried Rice :

  1. Take a pan add oil and heat it, add the pepperoni pieces and saute them well, after sauteing the pepperoni, we are going to add all the vegetables one by one and saute them, like shallots, onions, bell peppers, mixed vegetables, water chestnuts, mix and saute everything by adding one by one
  2. Then add 1 Tbs of curry powder and reserve the other half 1 Tbs of curry powder for adding it in the last while mixing the rice, After mixing the curry powder, add the sauce mixture and salt, mix well, place a lid / cover and cook until all the vegetables get cooked well
  3. Then add rice, also break the eggs and add it so that the eggs get cooked well, by blending in nicely and also give a smooth texture to the fried rice, add the remaining curry powder, mix and saute the fried rice well, If you like you can also add some crushed red chili flakes (which is optional), mix well, the Thai Curry Fried Rice is ready
