1. Purple Cabbage / Red Cabbage is a variety of cabbage, the cabbage gets this color according to their pH value of their soil

2. They are also called as red kraut or blue kraut, Mostly found in regions like America, Northern Europe and China

3. They belong to the Brassicaceae family

4. They have vitamins like Vitamin A, B-6 and C

5. Also contain 37% of Calcium, Iron, and 33% of Magnesium, ie., they have more nutrients and vitamins

6. On cooking these cabbages they turn to slightly blue in color, if you like to retain their color you can add vinegar while cooking these cabbages

7. The soil in which the cabbages are growing is more acidic the leaves of the cabbage turn red, if the soil is neutral the leaves turn purple and for alkaline soil the leaves turn green or yellow

8. These cabbages can be used for making coleslaw, salads as they are ideal for dieting, or you can make any stir fry recipes too
