Kovakkai Poriyal / Ivy Gourd / Tindora / Dondakaya stir fry : it is a side dish recipe, which is a little bit spicy too, and goes well with rice varieties with mild flavors

Ingredients :

Ingredients Required For Making Kovakkai Poriyal :

1. Ivy Gourd / Kovakkai / Tindora / Dondakaya – slit into two lengthwise pieces
2. Onion / Vengayam – 1 chopped
3. Curry Leaves / Karuveppilai – few
4. Turmeric Powder / Manjal Thool – 1/4 Ts
5. Asafetida / Hing – small pinch
6. Black Gram / Urad Dal / Ulundu
7. Mustard Seeds / Kaduku
8. Cumin Seeds / Seerakam
9. Grated Coconut / Thuruviya Thengai – 1/2 cup
10. Red Chili Powder / Milagai Thool – 2 Ts
11. Coriander Powder – 1 Ts
12. Salt

Method :

Method For Preparing Kovakkai Poriyal :

  1. Take a pan / kadai, add oil and heat it, then add all the spluttering ingredients like cumin seeds, mustard, curry leaves, and urad dal, let it splutter, then add the onions and saute them well
  2. Once the onions are sauted well add the ivy gourd / kovakkai pieces, mix and saute them well, then add turmeric powder, hing, coriander powder, red chili powder and salt, mix well, also add sufficient amount of water, let the ivy gourd pieces cook well, place a lid to cover and cook them
  3. Then switch off the flame and add the grated coconut pieces, mix well, the kovakkai poriyal is now ready
